Beef & Pumpkin Hearty Stew
A slow-cooked, spoonable beef and pumpkin stew — a warming, iron-rich meal-topper for cooler days.

🧺 Ingredients
- 150 g lean stewing beef, diced small
- 2 tbsp plain cooked pumpkin puree
- 300 ml plain water
- 1 tbsp finely chopped fresh parsley (optional)
👩🍳 Method
- Put the diced beef and water in a pan and bring to a gentle simmer.
- Cook slowly for around 35 minutes until the beef is very tender.
- Shred or finely chop the cooked beef and return it to a little of the cooking liquid.
- Stir through the pumpkin puree and parsley to make a soft, spoonable stew.
- Cool to room temperature and serve a small spoonful as a topper; refrigerate the rest for up to two days.
